Without using ghee and butter, today we will make maamoul using oil, it’s the most affordable maamoul you can make at home, What’s better is it doesn’t contain any semolina, it’s made fully with flour and doest’s cantain yeast so it’s light.
3 cups of flour, sifted 400 grams
½ cup cornstarch 60 grams
½ cup sugar 100 grams
3 tablespoons of powdered milk
1 small spoon of mahlab
1 cup vegetable oil 200 gr
1 tablespoon of blossom water and rose water, then add if needed
1/4 cup of water gradually
500 g date paste
3 tablespoons of vegetable oil
1 teaspoon cinnamon
We need 3 cups sifted flour with 102 cup cornstarch and 3 tbsp. powdered milk, it’s optional if not available. And 1 tsp mahlab to add flavor to the maamoul but if it’s not available then you can skip it. Then add 1/2 cup sugar and mix them together properly. Now add 1 cup vegetable oil and rub it with the ingredients together this, way we guarantee that it won’t become like a dough and will be crumbly anstead. Don’t rub for too long, just a light rub to make sure the flour is coated with the oil then you can move to the next step.
Add 1 tbsp. rose water and 1 tbsp. blossom water, and 1/4 cup xater but add half of it first then mix and add more if needed the dough should be combined at the same time it shouldn’t be too tough and dry nor too loose, at this point if you need any more lipuids, add rose water or blossom water to add more flavor instead of adding water, add 1 tbsp. to give it more moisture, you need to estimate if needs more liquid or more flour because each flour differs from the other, that’s why you need to estimate what needs to be added to adjust it. The dough is different that the dough that’s made with ghee, so don’t worry if it’s a little different as long as the dough holds itself as l said earlier, if you feel that it needs flour then add one soon at a time. I won’t add because it reached the right consistency but you can add if needed, just make sure not to add too much, add a bit by bit until you reach the right consistency. Conver it and let it for 15 minutes in the fridge, the results will be better when they dough is cold.
For the dates filling we need 500g of dates paste, add 3 tbsp. vegetable oil and 10tsp. cinnamon, combine the ingredients together until it’s a well combined dough and non sticky, you can putany filling in the maamoul but l’m adding the most affordabnle filling, to make the maamoul entirely affordable. To make things easier, from it into balls, so that once we roll the dough we can just add a ball in each maamul piece.
Afterthe dough has been cooled, we can easily use it, stretch it hand and add the dates inside. Try to balance the amount of filling to the amount of dough, put some flour in the mold and remove the excess so it doesn’t stick you can also put plastic wrap and put the dough on it. Put the maamoul piece and press on it by hand then tap it several times on your hand and it should come out.
The firt pan is ready, bake it in a preheated oven at 200 degress with the bottom heat on the middle oven rack bake for 10 minutes then broil, This is the second pan, whenever you fill a pan, put it in the oven and continue doing the rest, don’t pick them up immediarly because the dough will still be soft, let them cool for a while then they are ready to be served.
I prepared the dough in a few minutes, it doesn’t require any time, effort or wait we made it without using any ghee, butter and even without yeast and semolina a really easy, delicious and quick recipe.
